Sake brewery TSUJI (KATSUYAMA, OKAYAMA, JAPAN)

 

Tsuji Brewery, which has recently gained great popularity, is run by siblings. The brother is the president of the brewery, while the sister is the main brewer. It is still a rare position for a woman to hold in Japan. The brewery uses local rice from Okayama Omachi, and brewing methods with over 800 years of history, called Bodai Moto.

The sake produced by the brewery has an exquisite palette typical of the female style of weighing sake, and with the use of Omachi rice it also acquires a rich flavor. Thanks to the Bodai Moto method, sake gains a soft and creamy aftertaste.

The Bodai Moto method has over 800 years of tradition, but it regained popularity relatively recently along with the trend of "striving for naturalness" that is developing in Japan.

Nigori is a less filtered sake with a cloudy white color.
