Sake brewery IBARAKI-SHUZO (AKASHI HYOGO, JAPAN)

 

The city of Akashi (Hyogo Prefecture), where the IBARAKI SHUZO brewery is located, is a very famous sake production site. It was found by HIKO SAKE's CEO Mr. Sakamoto, during his journey all over Japan.

These local breweries are small, modest in production and focus on quality. The production is supervised by a young brewer, Mr. MIKIHITO IBARAKI.

This brewery is called the "Flower Brewery". The name comes from the flower yeast used to brew sake. According to Akashi using them can reinvent sake flavor. Their alcohol has a not too strong and very elegant smell, rich flavor and is perfectly balanced.
