Sake brewery BANJO JOZO (NAGOYA, AICHI, JAPAN)

 

Kuheiji is one of the most popular high-end sake in the world. The brewery is run by Kuheiji Kuno, who is the fifteenth president of Banjo Jozo. The name "Kuheiji" has been passed down from generation to generation for 300 years. Banjo Jozo was founded in 1647 in the city of Nagoya (Aichi Prefecture). During the post-war Japanese economic miracle, secondary sake was brewed en masse for large companies with a focus on quantity and speed. However, since 1996, the brewery has started brewing sake in limited quantities in order to be able to concentrate more on its quality. Currently, the brewery produces only premium Junmai-Daiginjo sake.

Kuheiji is now entering the Paris market, where it gained recognition and fame for its subtly refined and delicate flavor. Some of the best French restaurants with MICHELIN stars already have Kuheiji on their menu.

It is a brewery that is leading others today, and people call its president a genius.
